Cabbage Tree
Genus and Species: Cordyline Australis
Maori Name: Te Kouka
Maximum height: 20m
The Cabbage Tree is a distinctive feature of the New Zealand landscape, being sculptural and architectural in form. It is fast growing and narrow so fits easily into smaller spaces. Commonly found along forest margins, in clearings and around swamps, the Cabbage Tree bears many strongly scented flowers. Maori believe that if a Cabbage Tree flowers profusely a hot summer will follow. Parts of the tree were traditionally used by both Maori and European settlers for food, fuel and chimneys. The white heart shoot and base of youngest leaves were a delicacy to the early Maori. Large roots were dug up, split and slow cooked for 2 days- though fibrous, they contained both sugar and starch.
